This simple shrimp dish delivers a powerful kick of heat for a quick weekday dinner. The blender sauce can be made ahead of time and stored in the fridge to make dinnertime even easier.
Ingredients

4 Cibolo Junction Dried Red Chiles, Mild or Hot
- 4 Cibolo Junction Dried Árbol Chiles
- 1 Medium Tomato, Quartered
- 1 Tablespoon Tomato Paste
- 3 Cloves Garlic, Whole or Lightly Smashed
- 1 Small Onion, Roughly Chopped
- 1 Teaspoon Kosher Salt
- ½ Teaspoon Dried Oregano
- 1 Pound Large Raw Shrimp, Peeled and Deveined
Directions
Prepare the chiles. Use kitchen scissors to remove the stem and gently squeeze to shake out the seeds. Place the chiles in a heatproof bowl and cover with very hot water. Let sit for 15 minutes to soften.
Drain the water and place the softened chiles in a blender with the tomato, tomato paste, garlic, onion, salt, and oregano. Blend until very smooth and set aside.
In a large skillet, heat the oil over medium heat. Add the raw shrimp and briefly cook the shrimp, about 1 minute on each side.
Add the pepper and tomato sauce to the hot pan and saute until the shrimp is fully cooked and the sauce is heated through, about 2-3 minutes on each side.
Serve with rice or with tortillas.
