These simple black bean burgers pack a punch with your favorite New Mexico Salsa. Skip the cheese to make them vegan, or use gluten-free buns or lettuce wraps for a gluten-free meal.
Ingredients

1 15-ounce Can Black Beans, Drained and Rinsed

½ Cup of Your Favorite New Mexico Salsa
- 1 Cup Crushed Tortilla Chips
- 1 Teaspoon Ground Cumin
- ½ Teaspoon Onion Powder
- ½ Teaspoon Garlic Powder
- Kosher Salt and Black Pepper to Taste
- 1 Tablespoon Vegetable Oil, for Cooking
- Burger Buns
- Avocado and Pepper Jack Cheese, or Your Favorite Burger Toppings
Directions
In a large mixing bowl, mash the black beans using a fork or potato masher until mostly smooth but with some texture remaining.
Add ½ cup of your favorite New Mexico Salsa, crushed tortilla chips, ground cumin, onion powder, garlic powder, salt, and pepper to the mashed black beans. Mix well until all ingredients are evenly combined.
Divide the mixture into equal portions and shape them into burger patties, about ½ to ¾ inch thick.
Heat the vegetable oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side, or until the patties are golden brown and heated through.
Serve the black bean burgers on burger buns with pepper jack cheese and avocado, or your favorite burger toppings.
