Gooey cheese on the inside, crispy cheese on the top, these muffins are a simple but delicious variation on our already-irresistible Jalapeño Beer Bread mix.
Ingredients
- 1 Package Cibolo Junction Jalapeño Beer Bread Mix
- 6 Ounces Mexican Beer
- 6 Ounces Cheddar Cheese, Shredded (About 1 ½ Cups)
- 1 Jalapeño, Thinly Sliced (Optional)
Directions
Preheat the oven to 375℉ and prepare a muffin pan with pan spray or paper liners.
Combine the Cibolo Junction Jalapeño Beer Bread Mix and 4 ounces (about 1 cup) of the shredded cheddar. The cheese should be completely coated in the mix.
Add the beer and stir until just combined.
Divide the mix evenly into 6 or 8 muffins, depending on your desired size. Be careful not to overmix the batter while scooping.
Top each muffin with remaining cheese and jalapeño slices, if using.
Bake for 18-22 minutes, until the muffins are golden brown on the edges.
