Ingredients
- 1 Pound Ground Beef
- ½ Medium White Onion, Chopped
- 1 Medium Carrot, Chopped
- 1 Stalk Celery, Chopped

½ Cup New Mexico Salsa Green Chile Sauce
- 4 Cups Beef Stock
- ½ Teaspoon Kosher Salt
- ¼ Teaspoon White Pepper
- ¼ Cup Whole Milk or Half-and-half
- 8 Oz Cheese, Like Monterey Jack or Cheddar
- 2 Brioche Hamburger Buns, Cut Into Cubes
- 4 Tablespoons Unsalted Butter, Melted
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Onion Powder
- Salt and Pepper to Taste

Directions
Make the Croutons. Preheat your oven to 375°F. In a mixing bowl, toss the brioche cubes with melted butter, garlic powder, and onion powder until evenly coated. Spread the cubes on a baking sheet and bake for 8-10 minutes, or until golden brown and crispy.
Meanwhile, in a large soup pot over medium heat, brown the ground beef. Drain any excess fat.
Add the chopped onion, carrot, and celery to the pot with the ground beef. Continue cooking until vegetables are softened, about 5 minutes.
Stir in the milk or half-and-half and the shredded cheese. Continue stirring until the cheese is melted and the soup is smooth and creamy.
Remove from heat and ladle soup into bowls, then top with croutons and enjoy.
